Carrot Salad

Going on diet? Need a filling snack? Bored of regular salads? Try this carrot salad!

This recipe actually comes from one of my friends who lives in USA. She eats this salad even as breakfast. I had my doubts when I saw the ingredients. But when I tried it, it was amazingly tasty. I couldn't resist sharing this with you. So, enjoy!

Ingredients

1 big carrot : peeled and shredded

Lemon juice : 1 teaspoon

Honey OR Sugar : to taste (i used 1.5 teaspoons)

Raisins : 1 tablespoon

Poppy seeds : 1/2 teaspoon (Optional)
  
Mix all the ingredients in a bowl. Use fork or spoon to mix. (If you mix it with hand, the lemon juice will give bitter😶 taste)

Let it sit for atleast 15 minutes.

This salad can be served in room temperature or chilled.

You can prepare it overnight and refrigerate. Also, become creative to give this dish some color by adding tutti frutti or shredded almonds or even fresh grapes. Try and mail me the picture of it!
